Why do e-readers such as Kindle do not have a colour screen?

Because they don’t need them for simple reading. Basically for the same reason most books are black and white. You don’t need pink, and blue, and green, and yellow to just read. For whatever reason you do need a colour screen, there’s other, better options than an E reader.
