Why do people refer to “Judeo-Christian” values or concepts, when most forms of Judaism and Christianity have very different values and concepts?

A big reason is that Christianity was developed out of Judaism. Both are considered two of the three religions of the Book. The third being Islam. There are more similarities than difference between the three.
