Why do people refer to “Judeo-Christian” values or concepts, when most forms of Judaism and Christianity have very different values and concepts?

They are more similar to each other than comparing.. say… Christians or Hindus.
Jews lived in Europe for hundreds of years alongside Christians. They spoke the same language in their villages (tho Latin was spoken at the Catholic church) and worked pretty closely.
And they are both sons of Abraham.
