Why do some images/videos of Earth from space make it appear to curve upward, forming a ‘smile-shaped’ curve? Is it an actual phenomenon or just a result of the camera?

I believe it is just fish-eye lens that does that effect. It captures larger picture, but has a lot of distortion as a result, where items stretched radially, with increased intensity further away from center.
Basically same as door eye hole.
