We use a certain amount of water for a large variety of processes in the body, and some water is lost through respiration, perspiration ect. But the reason we need excess water is that water is used to flush toxins and excess nutrients out of the body. We should be peeing a lot because we need to excrete waste to keep things in balance. This is why drinking saltwater will dehydrate you. It takes more water to flush out the extra salt from your body than you would be drinking. Diffusion works best when the water that nutrients are diffusing into are at very low nutrient and ion concentrations, so having a constantly supply of fresh water into the body is the best way to ensure you can maintain balance.
