Why does freeze dried coffee completely dissolve in water, when coffee grounds don’t dissolve at all?

Freeze dried coffee is made by first brewing some strong coffee. That coffee is then frozen and then put in a chamber that removes the frozen water in it through sublimation (ice changing to water vapor without melting first).

What’s left is brewed coffee without the water. Since it was dissolved in the water before, it will dissolve again.
