There are a few reasons.
Mostly you have to go the warehouse to collect all the materials you need. This could be your own warehouse or a just a builders store. You want to do this asap otherwise you’re stuck in traffick with the desk job employees wich will make you late on site wich gives you less hours to work on site.
Second thing is weather. If it’s summer you want to get as many hours out of the sun as possible. The chance of burning, dehydration etc are too high and are costly in the long term for the company.
Third thing is that everyone is planned in with a little time margin. First come the brick layers then the roofers and so on. If you don’t get it done before the other one has to begin when they’re planned in
you will obstruct not only you’re part but also the other companies and they’re planning on other sites.
And last one is that if the job is for a government site there is a time limit and everyday over the deadline results in a latency fee and has to be paid by the company that caused it.
Also most of the times the situation on paper and in reality differ drastically. Nowadays more than before cause you don’t know what you will find in walls in old houses or under ground layers. People used to be trashy everywhere so there might come some surfacing chemicals, trash etc coming up while digging.
