Because the seat belts in planes are not for collisions like they are in cars. Planes don’t really collide with each other or with anything else, that would often be catastrophic.

The seat belts in planes are for turbulence. During turbulence the plane might suddenly move and if you’re not buckled in then you might get moved out of your seat.

3 point seat belts are often used on the premium seats that recline, so that the reclined or lie flat position is also somewhat safe during turbulence.
